I believe food should be tasty, nutritious, well presented and well cooked. Among all the ingredients that form a part of my cooking I like the coconut the most since there is so much you can do with it. Use it as garnish or include it as the main element of the recipe. Whatever you do with it, you have a very delicious dish!

Coconut Pie Recipe

Ingredients
  • 2 Eggs
  • ½ a cup of milk
  • ¼ cup of flour
  • A pinch of salt
  • 1 ½ cup of Sugar
  • A cup of coconut (shredded)
  • ½ a cup of butter (softened)
  • A 9 inch pastry shell (unbaked)
Procedure
  • First preheat the oven to a temperature of 325 degrees. Now beat the eggs and slowly and carefully add the sugar and a pinch of salt. Beat this mixture until it becomes thick.
  • After that has been done, blend in the flour, milk and butter. Next add the shredded coconut and spoon the mixture into the pastry shell. Once that is done, bake the pastry shell for about 50 minutes. It should look slightly brown when ready.

Coconut Shrimp Recipe

Ingredients
  • 2 lb of shrimp (fresh)
  • A cup of cornstarch
  • A cup of cream of a coconut
  • 3 tablespoons of lime juice
  • 2 cups of coconut (flaked)
  • Some vegetable oil
Procedure
  • To begin, peel the shrimp. Once that is done, coat each shrimp with cornstarch.
  • Next mix the cream of coconut with the lime juice and then dredge the shrimps through the prepared mixture.
  • Once all the above steps are complete, coat each piece of shrimp with the flaked coconut and then fry them in vegetable oil until they turn golden brown in color.

Delicious Coconut Cookies Recipe

Ingredients
  • 2 cups of flour
  • 2/3 cups of sugar
  • ¾ tablespoons of baking soda
  • ¼ tablespoon of salt
  • 1/3 cup of corn syrup (dark)
  • 3 tablespoons of vegetable oil
  • 1 teaspoon of vanilla
  • 1 teaspoon of coconut (extract)
  • 2 egg (whites)
  • 1/3 cup of coconut (flaked)
  • Some vegetable cooking spray
  • 2 tablespoons of coconut (toasted)
Procedure
  • First preheat the oven to 350 degrees. Now take a large bowl and combine the soda, flour, sugar and salt in it. In another bowl combine the oil, vanilla, coconut extract, egg whites and syrup and blend everything well. Next stir this mixture into the dry ingredients and combine it well.
  • Once the above step is complete, add 1/3 cup of coconut to the mixture and then put level teaspoons of the mixture onto the sprayed baking sheet. Now sprinkle with toasted coconut and bake for about 8 minutes. Once it is ready, let it cool and then place it on the wire racks.

Coconut Cake Recipe

Ingredients
  • 2 cups of flour
  • A cup of water
  • A cup of butter
  • A cup of coconut powder (dry)
  • 4 teaspoons of sugar
  • A few drops of lemon juice
  • Some dry fruits (chopped)
  • A 300-400 gram tin of condensed milk
  • 2 teaspoons of baking powder
  • ¼ teaspoon of baking soda
Procedure
  • First sieve the baking powder, flour and the baking soda together thrice. Now take a bowl and beat the condensed milk, butter, water and sugar in it for about 5 minutes.
  • Next mix the sieved baking powder, baking soda and flour with the above mixture. Once that is done, beat the mix for about 5 minutes.
  • Once the above steps are complete mix the dry coconut along with a few drops of lemon to the mixture and then beat the whole mix again for about 2 minutes. Now take a greased pan and empty the contents in it. After that add the dry fruits on top and bake at 180 degrees for about 40 to 45 minutes.

Brazilian Coconut Cookies Recipe

Ingredients
  • 1 c. of sugar
  • ½ c. of water
  • ¼ c. of flour
  • 4 egg yolks (beaten)
  • 2 c. of coconut (freshly grated) or 2 c. of packaged coconut (flaked)
  • ½ a teaspoon of vanilla extract
Procedure
  • Take a heavy saucepan and combine the water and sugar in it. Cook this mixture over a moderate flame until the sugar is completely dissolves. Wait till the syrup reaches a temperature of 230 degrees.
  • Now take a bowl and mix the egg yolks and flour together. Once that is done add 2 tablespoons of the hot syrup. Do remember to stir occasionally. Now pour this mixture into the syrup that is in the saucepan and stir occasionally. Now add the coconut and simmer. Keep on stirring the mixture until it becomes stiff and thick. Avoid letting the mixture come to a boil.
  • Next remove the pan from the heat and mix the vanilla in. After letting the mixture cool preheat the oven to a temperature of 375 degrees. Now take the cookie mixture and shape it into small balls by rolling the mixture between your palms. Put these balls on a cookie sheet leaving an inch space between them. Next put them into the center of the oven for about 15 minutes. They should be golden brown in color now. Serve the coconut cookies after they turn cold.
  • Once the above step is complete, add 1/3 cup of coconut to the mixture and then put level teaspoons of the mixture onto the sprayed baking sheet. Now sprinkle with toasted coconut and bake for about 8 minutes. Once it is ready, let it cool and then place it on the wire racks.
